Although I mentioned about chemistry, in fact, I do not believe the complete understanding of the brewing procedure. Therefore, I prefer to understand it in the way of guessing and experience. When there is no way of knowing something completely, one can only try to know it through such ways. I believe that it is the right way for the present situation for coffee industries.
